Book Review - Alan Ducasse 'Nature'


If you want to learn from the best, then you can’t learn from anyone better than the internationally proclaimed Michelin star chef, Alain Ducasse. The lifetime achievement award winner’s latest book gets back to nature and emphasises the importance of good, simple and healthy cooking. Based on the Mediterranean diet Ducasse was raised on, this beautifully presented book includes a wide variety of recipes that are packed full of vegetables and unique condiments.

Alain Ducasse’s “Nature” emphasises the importance of making everything from scratch including stock and condiments that can be used for other recipes in the book. Sections in the book are divided into:

For the larder -stocks and preserves. Yes of course, all stocks and preserves can be bought from the supermarket but Ducasse states that if made from home they are bound to be healthier and tastier.

Condiments – Recipes for dips, spreads and everything in between. These condiments can accompany other recipes in the book or be used on their own on bread or other aperitifs.

Grains and Cereals – Ducasse states that Grains and cereals are necessary for a balanced diet and includes recipes for everything from tarts and crepes to pizza and spaghetti.

Soups - Chowder, broths, chilled soups and many more. Some of the soup recipes reflect soups from Ducasses childhood and are full of nutrients from a variety of different vegetables.

Vegetables - One of the largest sections in the book, vegetables reign supreme in Ducasse’s cuisine and his book is here to show you why

Sea – Shellfish, crustaceans and wet fish recipes. The trick according to Ducasse is to treat the produce with respect and cook it very lightly

Land- Literally every animal on land is covered in this section. Eggs, lamb, beef, pork, veal and game. Ducasse is passionate about these ingredients and will show you new and different ways to be creative with these ingredients.

Desserts - These recipes are packed with fruity flavor and have minimal sugar and butter. These deserts are easy to make, yet very impressive.

Ducasse states “Cooking is a love affair, its all about falling in love with your ingredients.” ‘Nature’ is a book that will not only provide fantastic wholesome and healthy recipes, but will teach you to respect your food and cook your ingredients with dignity.
