Hunter Valley Restaurant Margan, Satisfies it's New Appetite for Excellence with new Head Chef


Margan Restaurant and Tasting Room in the picturesque wine region village of Broke in the Hunter Valley are excited to announce the appointment of new Head Chef, Ian Atkinson. Atkinson joins Maitre‘D, Dee-Ann Heath, award winning Winemaker and Sommelier Andrew Margan and Restaurateur Lisa Margan and her team.

Restaurateur, Lisa Margan, said they were delighted to welcome Atkinson to the Margan family. “Ian brings with him a passion for quality produce, innovative cuisine and restaurant excellence. We are thrilled to have him join the team at Margan.”

In 2009 Atkinson was selected as the Electrolux Appetite for Excellence NSW State Champion, which allowed him to compete with the country’s best ‘on the rise’ chefs for the ‘Young Chef of the Year’ title.

His career highlights include cooking in some of the most recognised kitchens around the world for acclaimed chefs such as Christine Manfield, David Thompson, Tony Tobin and Atul Kuchhar, mostly as a sous or senior sous chef, where he learnt traditional, as well as cutting edge cooking techniques.

Atkinson said that he felt right at home at Margan after growing up on a farm. “After living in big cities and working in fast paced kitchens since I was 18, it’s nice to have a green change and come back to my roots.”

“The new restaurant menu which has been co-designed with chef and restaurateur Lisa Margan, follows my current passion for Modern Mediterranean and draws on the flavours, textures and traditions of Italy, France and Spain,” Atkinson said.

The menu is updated frequently to reflect seasonal changes and the availability of local produce. The Restaurant’s Kitchen Garden provides much of the fruits, vegetables and eggs for the restaurant which is in line with the company’s ethos of ‘Estate Grown- Estate Made’.

Atkinson’s signature dishes at the restaurant include his Suckling pig with fennel puree, white anchovy and Pedro Ximinez dressing and the wild mushroom and ricotta rotolo with rocket pesto and poached egg, which are sure to develop a dedicated following amongst diners.

The Margan Restaurant, which launched in 2007, has proudly received several accolades, including a Finalist standing for the Best New Restaurant at the 2008 Restaurant and Caterers Awards. The Restaurant was also listed in the SMH Good Food Guide for 2008, 2009 and 2010. Ian’s addition to the team begins a whole new era for Margan, taking it to a new level with a fresh and exciting new menu and continued focus on excellence.
